Santa Fe Chicken Foil Packets bring the vibrant flavors of Mexican cuisine to your table. Juicy chicken, black beans, corn, and cheese are all cooked together in a simple foil packet, making for an easy and delicious meal that can be grilled, baked, or even cooked over a campfire.
Ingredients
4 boneless skinless chicken breasts (7–8 oz each)
1 cup shredded Mexican cheese or Monterey Jack
1 cup canned whole kernel corn, drained
1 cup canned black beans, drained and rinsed
1 cup salsa or Rotel diced tomatoes with green chilies
2 medium bell peppers, diced
1 teaspoon chili powder
Salt and pepper to taste
Fresh cilantro, diced tomatoes, and sliced jalapeños for garnish (optional)

Instructions
- Preheat your grill to medium-high heat.
- Spray four large pieces of aluminum foil with cooking spray to prevent sticking.
- Place one chicken breast in the center of each piece of foil. Season with chili powder, salt, and pepper. Top each with black beans, corn, salsa (or Rotel), and diced bell peppers.
- Fold the foil over the chicken and vegetables, sealing tightly to form packets.
- Grill the packets for 10 minutes, flip, and grill for another 10–12 minutes, or until the chicken reaches 165°F (74°C) internally.
- Carefully open the foil packets and sprinkle shredded cheese over each chicken breast. Close the foil loosely and grill for another 2 minutes, until the cheese melts.
- Remove from grill, garnish with cilantro, diced tomatoes, and jalapeños, and serve hot.
Notes
For a vegetarian version, replace the chicken with extra vegetables like zucchini, mushrooms, or sweet potatoes.
Feel free to use different cheese, like cheddar or pepper jack, for a variation in flavor.
To make it spicier, add diced jalapeños to the packet before grilling.
