Description

Ingredients

For the Salmon:

  • 1 pound salmon steaks (or fillets)
  • Juice of 1 lemon
  • 1 tablespoon chopped fresh rosemary
  • Salt and freshly ground black pepper, to taste
  • 1 lemon, sliced
  • ⅓ cup water

For the Fruit Salsa:

  • ¼ cup diced fresh pineapple
  • ¼ cup minced onion
  • 3 cloves garlic, minced
  • 2 fresh jalapeño peppers, diced
  • 1 tomato, diced
  • ½ cup pineapple juice
  • ¼ cup diced red bell pepper
  • ¼ cup diced yellow bell pepper

Instructions

  • Preheat Oven:
    Set your oven to 350°F (175°C).

  • Prepare the Salmon:
    Place salmon steaks in a shallow baking dish. Drizzle with lemon juice, then season with rosemary, salt, and pepper. Lay lemon slices over the salmon and pour ⅓ cup of water into the dish.
