Description

Salmon Cakes offer a crispy, golden exterior with a tender, flavorful interior. This easy recipe transforms canned salmon into a gourmet meal, perfect for busy weeknights or as a versatile appetizer or main course


Ingredients

  • 1 (14.75 ounce) can red salmon, skin and bone removed, drained, and flaked
  • 2 large eggs
  • ½ lemon, juiced
  • 1 tablespoon chopped capers
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon cayenne pepper
  • 12 saltine crackers, crushed
  • 1 tablespoon bread crumbs (optional)
  • 1 tablespoon butter
  • 1 tablespoon olive oil

Instructions

  • Prepare the Salmon Mixture:
    • In a bowl, combine the flaked salmon, eggs, lemon juice, capers, salt, black pepper, and cayenne pepper. Mix until well combined.
  • Add Crackers and Form Patties:
    • Stir in the crushed saltine crackers until the mixture holds together. If it’s too wet, add bread crumbs to achieve the right consistency.
    • Divide the mixture into four equal portions and shape into patties.
  • Cook the Patties:
    • Heat butter and olive oil in a skillet over medium heat.
    • Cook the patties for about 5 minutes per side or until golden brown and cooked through.
  • Serve:
    • Remove the patties from the skillet and drain on paper towels. Serve hot with a dipping sauce or a squeeze of lemon.
