Ingredients
- 1 (14.75 ounce) can red salmon, skin and bone removed, drained, and flaked
- 2 large eggs
- ½ lemon, juiced
- 1 tablespoon chopped capers
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- ½ teaspoon cayenne pepper
- 12 saltine crackers, crushed
- 1 tablespoon bread crumbs (optional)
- 1 tablespoon butter
- 1 tablespoon olive oil
Instructions
- Prepare the Salmon Mixture:
- In a bowl, combine the flaked salmon, eggs, lemon juice, capers, salt, black pepper, and cayenne pepper. Mix until well combined.
- Add Crackers and Form Patties:
- Stir in the crushed saltine crackers until the mixture holds together. If it’s too wet, add bread crumbs to achieve the right consistency.
- Divide the mixture into four equal portions and shape into patties.
- Cook the Patties:
- Heat butter and olive oil in a skillet over medium heat.
- Cook the patties for about 5 minutes per side or until golden brown and cooked through.
- Serve:
- Remove the patties from the skillet and drain on paper towels. Serve hot with a dipping sauce or a squeeze of lemon.
