Description

A cozy Scottish-style casserole made from fluffy buttery mashed potatoes, sautéed cabbage and onions, and a golden cheddar topping. Simple ingredients transform into a deeply comforting, naturally gluten-free side or vegetarian main.


Ingredients

4 medium starchy potatoes, peeled and chopped

4 tablespoons butter, divided

1/2 small head green cabbage (or Savoy), finely shredded

1 small onion, finely chopped

Salt and pepper, to taste

1/2 cup grated sharp cheddar cheese

Chives or parsley, finely chopped (optional garnish)


Instructions

  1. Heat oven to 375°F (190°C). Generously butter a baking dish.
  2. Boil potatoes in salted water for 15–20 minutes until tender. Drain, then mash with 2 tablespoons butter until smooth and fluffy.
  3. Meanwhile, melt remaining 2 tablespoons butter in a large skillet over medium heat. Sauté shredded cabbage and chopped onion for about 10 minutes until softened. Season with salt and pepper.
  4. Stir cabbage mixture into mashed potatoes until fully combined.
  5. Transfer mixture to the buttered baking dish and smooth the top. Sprinkle cheddar evenly over the surface.
  6. Bake uncovered for 20–25 minutes, until cheese is melted, golden, and bubbling.
  7. Let rest briefly, then garnish with chives or parsley before serving.

Notes

Swap cabbage for kale, Savoy, or Brussels sprouts.

Use Gruyère or white cheddar for a different flavor profile.

Add a splash of cream for an extra-luxurious mash.

Bagged coleslaw mix works well as a shortcut.
