Description
A cozy Scottish-style casserole made from fluffy buttery mashed potatoes, sautéed cabbage and onions, and a golden cheddar topping. Simple ingredients transform into a deeply comforting, naturally gluten-free side or vegetarian main.
Ingredients
4 medium starchy potatoes, peeled and chopped
4 tablespoons butter, divided
1/2 small head green cabbage (or Savoy), finely shredded
1 small onion, finely chopped
Salt and pepper, to taste
1/2 cup grated sharp cheddar cheese
Chives or parsley, finely chopped (optional garnish)
Instructions
- Heat oven to 375°F (190°C). Generously butter a baking dish.
- Boil potatoes in salted water for 15–20 minutes until tender. Drain, then mash with 2 tablespoons butter until smooth and fluffy.
- Meanwhile, melt remaining 2 tablespoons butter in a large skillet over medium heat. Sauté shredded cabbage and chopped onion for about 10 minutes until softened. Season with salt and pepper.
- Stir cabbage mixture into mashed potatoes until fully combined.
- Transfer mixture to the buttered baking dish and smooth the top. Sprinkle cheddar evenly over the surface.
- Bake uncovered for 20–25 minutes, until cheese is melted, golden, and bubbling.
- Let rest briefly, then garnish with chives or parsley before serving.
Notes
Swap cabbage for kale, Savoy, or Brussels sprouts.
Use Gruyère or white cheddar for a different flavor profile.
Add a splash of cream for an extra-luxurious mash.
Bagged coleslaw mix works well as a shortcut.
