Description

Reuben Pinwheels are a portable and bite-sized twist on the classic Reuben sandwich, combining creamy dressing, tangy sauerkraut, Swiss cheese, and corned beef wrapped in soft tortillas.


Ingredients

8 ounces cream cheese, softened to room temperature

1/2 cup Thousand Island dressing

1/2 cup packed sauerkraut, rinsed and well drained

2 cups shredded Swiss cheese

12 ounces thinly sliced deli corned beef (16 slices)

8 (9-inch) flour tortillas


Instructions

  1. In a medium bowl, combine the softened cream cheese, Thousand Island dressing, and sauerkraut. Mix until smooth and well incorporated.
  2. Place a tortilla on a flat surface. Scoop 2 heaping tablespoons of the cream cheese mixture and spread it evenly over one side of the tortilla, almost to the edges.
  3. Sprinkle 1/4 cup of shredded Swiss cheese over the cream cheese mixture.
  4. Lay 2 slices of corned beef over the cheese. You can tear the slices if needed to fit the tortilla.
  5. Repeat the process with the remaining tortillas and ingredients.
  6. Once all the tortillas are filled and rolled, chill the pinwheels in the refrigerator for 30 minutes to help them hold their shape.
  7. After chilling, slice each tortilla into 6-8 pinwheels, depending on your preferred size.
  8. Serve immediately or store in the fridge until ready to enjoy.

Notes

For a gluten-free version, swap regular flour tortillas for gluten-free tortillas.

Add spices such as cayenne pepper or paprika to the cream cheese mixture for an extra kick.

Make a veggie version by adding sliced pickles, onions, or bell peppers to the filling.

For a lighter option, use low-fat cream cheese and a reduced-fat dressing.
