Ingredients
1 (10 oz) package frozen chopped spinach, thawed and well-drained
1 cup seasoned breadcrumbs
1 cup shredded cheddar cheese
½ cup grated Parmesan cheese
1 small onion, finely chopped
3 large eggs
¼ teaspoon garlic powder
¼ teaspoon salt
¼ teaspoon black pepper
Optional: pinch of nutmeg for extra warmth
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine thawed spinach, breadcrumbs, cheddar cheese, Parmesan cheese, chopped onion, eggs, garlic powder, salt, and pepper. Mix well until the mixture is slightly sticky but firm enough to hold its shape when rolled.
- Shape the mixture into 1-inch balls using your hands or a small cookie scoop, and place them evenly on the prepared baking sheet.
- Bake for 20-25 minutes, or until the spinach balls are firm to the touch and golden brown on the outside.
- Allow the spinach balls to cool slightly before serving. Serve warm or at room temperature with your favorite dipping sauce like marinara, ranch, or garlic aioli.
Notes
For a gluten-free version, use gluten-free breadcrumbs.
If you prefer a spicier version, add red pepper flakes or cayenne pepper to the mixture.
