Ingredients
2 cups pumpkin puree (well-drained if watery)
1 cup ricotta cheese
1 egg
2 cups all-purpose flour

1/2 cup unsalted butter
1/4 cup fresh sage leaves
Parmesan cheese, for serving
Instructions
- In a mixing bowl, combine pumpkin puree, ricotta, egg, nutmeg, and salt.
- Gradually add flour until a soft dough forms.
- Roll dough into ropes and cut into bite-sized pieces to form gnocchi.
- Bring a large pot of salted water to a boil. Add gnocchi and cook until they float to the surface. Drain.
- Meanwhile, melt butter in a skillet over medium heat. Add sage leaves and cook until butter browns and turns fragrant.
- Toss cooked gnocchi in the brown butter sauce.
- Serve topped with freshly grated Parmesan.
