Ingredients
2 cups all-purpose flour
2 cups granulated sugar
2 eggs
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 (20 oz) can crushed pineapple in juice, undrained
1 cup chopped pecans
1 teaspoon vanilla extract
Frosting:
1/2 cup butter, softened
1 (8 oz) package cream cheese, softened
1 teaspoon vanilla extract
1 1/2 cups powdered sugar
1/2 cup chopped pecans (for garnish)
Instructions
-
Preheat the oven to 350°F (175°C) and grease and flour a 9×13-inch baking pan.
-
In a large bowl, mix the flour, sugar, eggs, baking soda, salt, and cinnamon. Stir in the undrained pineapple, pecans, and vanilla extract until fully combined.
-
Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
-
While the cake is cooling, prepare the frosting by beating together the butter, cream cheese, and vanilla until smooth. Gradually add the powdered sugar and mix until creamy.
-
Once the cake has cooled, spread the frosting evenly on top and garnish with chopped pecans.
Notes
Add shredded coconut to the batter for added texture and flavor.
Use walnuts or almonds instead of pecans for a different nutty taste.
For a slightly less sweet version, reduce the powdered sugar in the frosting.
