Description

These Lemon Oatmeal No-Bake Cookies are a refreshing and healthy treat, combining the zesty flavor of lemon with chewy oats for a delightful snack or light dessert. They come together quickly and require no baking, making them a perfect go-to option for a light, sweet, and easy treat.


Ingredients

1 ½ cups old-fashioned rolled oats

½ cup natural peanut butter (or almond butter)

¼ cup maple syrup or honey

2 tablespoons coconut oil (melted)

Zest of 1 lemon

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

Pinch of salt


Instructions

  1. In a large mixing bowl, combine the oats, peanut butter, maple syrup (or honey), melted coconut oil, lemon zest, lemon juice, vanilla extract, and a pinch of salt.
  2. Stir until all the ingredients are well combined and the mixture becomes thick and sticky.
