Description

Soft, fudgy brownies meet the luxurious crunch of pistachios and the creamy hazelnut center of Ferrero Rocher chocolates in this decadent dessert. Perfect for gatherings, special occasions, or anytime you want to impress with a gourmet treat.


Ingredients

1 cup (225g) unsalted butter (or coconut oil for dairy-free option)

2 cups (400g) granulated sugar (or brown sugar)

4 large eggs (or flaxseed meal mixed with water for vegan option)

1 teaspoon vanilla extract

1 cup (130g) all-purpose flour (or half whole wheat flour)

1 cup (90g) unsweetened cocoa powder

1/2 teaspoon salt

1 cup (150g) chopped pistachios (or sunflower seeds for nut-free)

10 Ferrero Rocher chocolates

1/2 cup (60g) melted chocolate (for drizzling)

Extra chopped pistachios (for garnish)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt the butter in a medium saucepan over low heat. Remove from heat and stir in the sugar until well combined.
  3. Allow to cool slightly, then add eggs one at a time, mixing well after each. Stir in vanilla extract.
  4. In a separate bowl, whisk together flour, cocoa powder, and salt. Gradually fold into the wet mixture until just combined.
  5. Gently fold in chopped pistachios.
  6. Line a 9×13 inch baking pan with parchment paper, leaving overhang. Pour in batter and spread evenly.
  7. Bake for 25–30 minutes, or until a toothpick comes out with a few moist crumbs.
  8. Remove from oven and immediately press Ferrero Rocher chocolates into the warm brownies. Cool for 10 minutes.
  9. Melt chocolate and drizzle over brownies. Sprinkle with extra chopped pistachios.
  10. Let brownies cool completely in the pan, then lift out using parchment paper and cut into squares.

Notes

Use flax eggs and coconut oil for a vegan version.

Replace pistachios with almonds, walnuts, or hazelnuts for a different nutty flavor.

Add caramel or dulce de leche between the batter and Ferrero Rocher for extra richness.

Dark chocolate can replace cocoa powder for more intense flavor.

Store at room temperature for 3 days, refrigerate for 1 week, or freeze for 3 months.
