- 1 cup pineapple chunks (fresh or canned, drained)
- 1 cup bell peppers, sliced
- ½ cup onion, diced
- ½ cup peas and carrots (optional)
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, grated
- 1 tablespoon vegetable oil

Instructions
- Marinate the chicken: In a bowl, mix soy sauce, garlic, and ginger. Add the chicken pieces and marinate for 15-30 minutes.
- Cook the rice: Prepare jasmine or brown rice using a stovetop or rice cooker.
- Stir-fry the chicken: Heat oil in a large pan or wok. Cook the chicken for about 5-7 minutes until browned and fully cooked. Remove and set aside.
- Sauté the vegetables: In the same pan, stir-fry the onions, bell peppers, peas, and carrots until tender.
