Ingredients

For the Chicken & Rice:

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 cups cooked jasmine or brown rice
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1 cup bell peppers, sliced
  • ½ cup onion, diced
  • ½ cup peas and carrots (optional)
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon vegetable oil

Optional Garnishes:

  • Sesame seeds
  • Fresh cilantro
  • Lime wedges
  • Sriracha for spice

Instructions

  • Marinate the chicken: In a bowl, mix soy sauce, garlic, and ginger. Add the chicken pieces and marinate for 15-30 minutes.
  • Cook the rice: Prepare jasmine or brown rice using a stovetop or rice cooker.
  • Stir-fry the chicken: Heat oil in a large pan or wok. Cook the chicken for about 5-7 minutes until browned and fully cooked. Remove and set aside.
  • Sauté the vegetables: In the same pan, stir-fry the onions, bell peppers, peas, and carrots until tender.
  • Combine ingredients: Add the cooked rice, chicken, and pineapple chunks to the pan. Stir in additional soy sauce if needed. Mix well and cook for another 2-3 minutes.
  • Serve & garnish: Plate the dish and garnish with sesame seeds, cilantro, or lime wedges. Enjoy!
