Description

This Pineapple Bake is a tropical-inspired dessert made with crushed pineapple, sugar, eggs, and cinnamon, baked until golden with a buttery topping. Sweet, moist, and versatile, it can be served warm or chilled as dessert, brunch, or a sweet snack.

Ingredients

  • 1 (20 oz) can crushed pineapple with juice
  • 3/4 cup sugar
  • 2 eggs
  • 2 tablespoons cornstarch
  • 2 teaspoons vanilla extract
  • 1 1/2 tablespoons butter, sliced into pats
  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. In a large bowl, mix together crushed pineapple, sugar, eggs, cornstarch, and vanilla until smooth and combined.
  3. Pour the mixture into the prepared pan.
  4. Place butter pats evenly on top and sprinkle with cinnamon.
  5. Bake for 45 minutes, or until edges are golden brown and the center is set.
  6. Let cool slightly before serving to allow the texture to settle.

Notes

  • Add shredded coconut for extra tropical flavor.
  • Top with crushed graham crackers or chopped nuts before baking for crunch.
  • Reduce sugar for a lighter version since pineapple is naturally sweet.
  • Serve with whipped cream or ice cream for a creamy finish.
  • Can be made dairy-free by replacing butter with coconut oil or margarine.
