Ingredients
- 1 (20 oz) can crushed pineapple with juice
- 3/4 cup sugar
- 2 eggs
- 2 tablespoons cornstarch
- 2 teaspoons vanilla extract
- 1 1/2 tablespoons butter, sliced into pats
- 1 teaspoon cinnamon
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×9-inch baking pan.
- In a large bowl, mix together crushed pineapple, sugar, eggs, cornstarch, and vanilla until smooth and combined.
- Pour the mixture into the prepared pan.
- Place butter pats evenly on top and sprinkle with cinnamon.
- Bake for 45 minutes, or until edges are golden brown and the center is set.
- Let cool slightly before serving to allow the texture to settle.
Notes
- Add shredded coconut for extra tropical flavor.
- Top with crushed graham crackers or chopped nuts before baking for crunch.
- Reduce sugar for a lighter version since pineapple is naturally sweet.
- Serve with whipped cream or ice cream for a creamy finish.
- Can be made dairy-free by replacing butter with coconut oil or margarine.
