These Pie Maker Spinach and Cheese Fritters are golden, cheesy, and packed with wholesome spinach. Made effortlessly in a pie maker, they’re crisp on the outside and soft inside — perfect for breakfast, lunch, or a light snack.
Ingredients
250 g frozen spinach, thawed
200 g cottage cheese
2 eggs
1/4 cup milk
2/3 cup self-raising flour
1/3 cup grated cheddar cheese
2 green onions, chopped
Salt and pepper, to taste
Instructions
- Squeeze excess moisture from the thawed spinach to prevent soggy fritters.
- In a large bowl, whisk together cottage cheese, eggs, and milk until smooth.
- Add the flour, cheddar, spinach, and chopped green onions. Season with salt and pepper and mix to form a thick batter.
- Preheat the pie maker according to the manufacturer’s instructions.
- Spoon about 1/4 cup of the mixture into each hole. Close the lid and cook for 10–12 minutes, or until golden brown and firm.
- Transfer the fritters to a plate and repeat with remaining mixture. Serve warm with your favourite dip or salad.
Notes
Use feta or parmesan instead of cheddar for a stronger cheese flavour.
Add herbs like dill or parsley for extra freshness.
Cook in a frying pan if you don’t have a pie maker.
Serve with sour cream, sweet chili sauce, or tzatziki.
Ensure spinach is well-drained to keep fritters crisp.
