Description

Pickle Bites are a fun and tangy snack that combine the crunch of pickles with a creamy, cheesy filling. These bite-sized treats are perfect for parties, gatherings, or as a savory snack. With a blend of cream cheese, shredded cheddar, and seasonings, they offer a burst of flavor in every bite, making them a crowd-pleasing favorite!

Ingredients

  • 1 jar dill pickle spears (or whole pickles)
  • 8 oz cream cheese (softened)
  • 1/2 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp fresh dill (optional)
  • 1/4 cup finely chopped green onions (optional)

Instructions

  • Prepare the pickles: Drain the pickles and slice them into thick rounds, approximately 1-inch thick. You can also cut them into bite-sized pieces depending on your preference.
  • Make the filling: In a medium bowl, mix together the softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, and any optional ingredients like fresh dill. Stir until smooth and well-combined.
  • Stuff the pickles: Carefully scoop out a little of the center of each pickle slice to create a small pocket. Stuff each slice with the cream cheese mixture, pressing gently to fill the entire cavity.
  • Chill and serve: Refrigerate the stuffed pickles for at least 30 minutes to allow the flavors to meld and the cream cheese to firm up. Serve chilled and enjoy!

Notes

  • You can use bread and butter pickles or sweet pickles if you prefer a sweeter option.
  • To add some spice, mix in a pinch of cayenne pepper or chili flakes into the filling.
  • Get creative with the filling by adding ingredients like ranch seasoning, crumbled blue cheese, or hot sauce for extra flavor.
  • Make sure to drain the pickles well before stuffing to avoid excess moisture.
