Description

A hearty, one-skillet Picadillo made with seasoned ground beef, tender potatoes, tomatoes, and warm spices. Comforting, flavorful, and perfect for simple family meals.


Ingredients

2 lbs lean ground beef

1 large green bell pepper, deseeded and diced

1 large onion, diced

4 cloves garlic, minced

1 (14-oz) can petite diced tomatoes

1 (4-oz) can green chilies

1 tsp dried oregano

2 tsp chili powder

2 tsp cumin

1 tsp salt

1 tbsp apple cider vinegar

3 beef bouillon cubes

2 cups water

2 large Russet potatoes, peeled and cubed


Instructions

  1. Heat a large skillet over medium-high heat and brown the ground beef, breaking it apart as it cooks. Drain excess fat if needed.
  2. Add diced onion and bell pepper; cook until softened. Stir in minced garlic and cook until fragrant.
  3. Add diced tomatoes and green chilies; stir to combine.
  4. Mix in oregano, chili powder, cumin, and salt, coating the meat and vegetables evenly.
  5. Add bouillon cubes and pour in the water, stirring until dissolved.
  6. Stir in apple cider vinegar and add the cubed potatoes, coating them in the sauce.
  7. Bring to a simmer, reduce heat to medium-low, cover, and cook until potatoes are tender and sauce thickens, stirring occasionally.
  8. Adjust seasoning and serve warm.

Notes

Add extra potatoes for a heartier dish.

Use smoked paprika for deeper flavor.

Increase chili powder or add fresh chilies for more heat.

Serve with rice or warm tortillas.

Add a splash of water when reheating if the sauce thickens.
