Ingredients
1 pre-made pie crust (store-bought or homemade)
2 cups fresh tomatoes, diced
1 cup mozzarella cheese, shredded
¼ cup grated Parmesan cheese
½ cup onion, finely chopped
2 cloves garlic, minced
1 tablespoon fresh basil, chopped
1 teaspoon dried oregano
1 teaspoon sugar
Salt and pepper to taste
Olive oil for drizzling
1 egg (for egg wash)
Instructions
- Preheat the oven to 375°F (190°C).
- Roll out the pre-made pie crust and fit it into a 9-inch pie plate. Trim excess edges and prick the bottom with a fork.
- In a skillet, heat a drizzle of olive oil over medium heat. Sauté the chopped onions and minced garlic for 3-5 minutes until softened and fragrant. Let cool slightly.
- In a large bowl, mix the diced tomatoes, sautéed onions and garlic, mozzarella cheese, Parmesan cheese, fresh basil, oregano, sugar, salt, and pepper. Stir to combine.
- Pour the tomato mixture into the pie crust, spreading it evenly.
- Beat the egg and brush the egg wash around the edges of the crust.
- Bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.
- Let the pie cool for 10-15 minutes before slicing and serving.
Notes
For a crispier crust, pre-bake the crust for 5-7 minutes before adding the filling.
If you prefer a spicier version, add red pepper flakes or a diced jalapeño to the filling.
For a vegetarian version, omit any meats and enjoy the full flavor of the cheese and tomatoes.
