Ingredients

1 pre-made pie crust (store-bought or homemade)

2 cups fresh tomatoes, diced

1 cup mozzarella cheese, shredded

¼ cup grated Parmesan cheese

½ cup onion, finely chopped

2 cloves garlic, minced

1 tablespoon fresh basil, chopped

1 teaspoon dried oregano

1 teaspoon sugar

Salt and pepper to taste

Olive oil for drizzling

1 egg (for egg wash)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pre-made pie crust and fit it into a 9-inch pie plate. Trim excess edges and prick the bottom with a fork.
  3. In a skillet, heat a drizzle of olive oil over medium heat. Sauté the chopped onions and minced garlic for 3-5 minutes until softened and fragrant. Let cool slightly.
  4. In a large bowl, mix the diced tomatoes, sautéed onions and garlic, mozzarella cheese, Parmesan cheese, fresh basil, oregano, sugar, salt, and pepper. Stir to combine.

Notes
