Description

Peach Crumb Bars combine juicy peaches with a buttery, crumbly topping for the perfect dessert. This easy-to-make treat, with its sweet and fruity flavor, is ideal for any occasion, from potlucks to family gatherings. The delicate balance of cinnamon, brown sugar, and fresh peaches will have everyone reaching for more.

Ingredients

Fresh peaches

½ cup sugar

1 tbsp cornstarch

1 tbsp lemon juice

1 ½ cups all-purpose flour

¾ cup brown sugar

1 tsp baking powder

1 tsp cinnamon

½ tsp salt

½ cup butter (cold, cut into small pieces)

1 tsp vanilla extract

1 large egg

Instructions

  • Preheat Oven:

    • Preheat the oven to 375°F (190°C) and prepare a 9×13-inch baking dish with non-stick spray.

  • Prepare the Peach Filling:

    • In a medium bowl, whisk together sugar and cornstarch. Add diced peaches and lemon juice. Stir and let sit to macerate.

  • Make the Crumb Topping:

    • In a large bowl, whisk together flour, sugar, brown sugar, baking powder, salt, and cinnamon.

    • Cut cold butter into the mixture using a pastry blender or fork until it becomes crumbly.

    • Whisk egg and vanilla extract in a separate bowl and add to the crumb mixture. Stir until combined.

  • Assemble the Bars:

    • Press half of the crumb mixture into the prepared baking dish.

    • Spread the peach filling evenly on top.

    • Squeeze the remaining crumb mixture and scatter it over the peaches.

  • Bake:

    • Bake for 45 minutes, or until the topping is golden brown and the filling is bubbly.

  • Cool and Serve:

    • Allow the bars to cool completely before serving. For an extra treat, serve with a scoop of vanilla ice cream.

Notes

Frozen Peaches: If fresh peaches aren’t available, frozen peaches can be used. Just make sure to thaw and drain them thoroughly.

Other Fruits: This recipe works well with other fruits like berries or apples for a unique twist.

Vegan Option: Swap butter for plant-based butter and use a flax egg or chia egg for a vegan version.

Adding Nuts: For extra texture, consider adding chopped nuts like pecans or walnuts to the crumb topping.
