Description

Pasta Limone is a light, zesty pasta dish featuring lemon, garlic, and olive oil, perfect for a quick, refreshing, and flavorful meal.


Ingredients

8 ounces of spaghetti (or your favorite pasta)

3 tablespoons extra virgin olive oil

2 cloves garlic, minced

Zest of 2 lemons

Juice of 1 lemon

¼ teaspoon red pepper flakes (optional)

Salt and freshly ground black pepper to taste

¼ cup fresh parsley, chopped

Freshly grated Parmesan cheese for serving (optional)


Instructions

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente.
  2. Before draining the pasta, reserve about ½ cup of the pasta cooking water. Drain the pasta and set it aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.
  4. Stir in the lemon zest and lemon juice, followed by red pepper flakes (if using). Let it cook for another minute to blend all the flavors.
  5. Add the drained pasta to the skillet. Toss well to coat the pasta evenly in the lemony sauce, ensuring each strand gets a good amount of the sauce.
  6. If the sauce is too thick, gradually add the reserved pasta water until you reach your desired consistency.
  7. Season with salt and freshly ground black pepper to taste. Mix well to make sure the seasonings are evenly distributed.
  8. Stir in the chopped parsley just before serving to add a fresh, herbal note.
  9. Plate the pasta immediately and sprinkle freshly grated Parmesan cheese on top for extra richness.
