Ingredients
8 ounces of spaghetti (or your favorite pasta)
3 tablespoons extra virgin olive oil
2 cloves garlic, minced
Zest of 2 lemons
Juice of 1 lemon
¼ teaspoon red pepper flakes (optional)
Salt and freshly ground black pepper to taste
¼ cup fresh parsley, chopped
Freshly grated Parmesan cheese for serving (optional)
Instructions
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente.
- Before draining the pasta, reserve about ½ cup of the pasta cooking water. Drain the pasta and set it aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.
- Stir in the lemon zest and lemon juice, followed by red pepper flakes (if using). Let it cook for another minute to blend all the flavors.
- Add the drained pasta to the skillet. Toss well to coat the pasta evenly in the lemony sauce, ensuring each strand gets a good amount of the sauce.
- If the sauce is too thick, gradually add the reserved pasta water until you reach your desired consistency.
- Season with salt and freshly ground black pepper to taste. Mix well to make sure the seasonings are evenly distributed.
- Stir in the chopped parsley just before serving to add a fresh, herbal note.
- Plate the pasta immediately and sprinkle freshly grated Parmesan cheese on top for extra richness.
