Ingredients

For the Crust:

Instructions

  1. Prepare the Orange Gelatin:

    • In a heatproof bowl, combine orange gelatin with boiling water. Stir until the gelatin dissolves completely. Set aside to cool to room temperature (about 30 minutes).
  2. Prepare the Crust:

    • In a medium bowl, mix together graham cracker crumbs, granulated sugar, melted butter, and a pinch of salt. Stir until the mixture is well combined.
    • Press the mixture evenly into the bottom of a 9-inch springform pan, and slightly up the sides.
    • Place the crust in the freezer for at least 30 minutes to set.
  3. Prepare the Cheesecake Filling:

    • In a large bowl, beat together softened cream cheese and 1 cup of powdered sugar using an electric mixer until smooth and creamy.
    • In a separate bowl, whip heavy whipping cream, remaining powdered sugar, and vanilla extract until stiff peaks form.
    • Gently fold half of the whipped cream into the cream cheese mixture until combined.
    • Fold the remaining whipped cream into the cooled orange gelatin until fully incorporated.
  4. Assemble the Cheesecake:

    • Spread half of the cream cheese mixture evenly over the chilled crust.
    • Pour the orange gelatin mixture over the cream cheese layer, spreading it evenly.
    • Gently spread the remaining cream cheese mixture over the orange layer.
    • If desired, use a knife to swirl the layers together for a marbled effect.
  5. Chill:

    • Cover the cheesecake and refrigerate for at least 6 hours, or overnight, until fully set.
