Ingredients
4 boneless, skinless chicken breasts or thighs
2 chipotle peppers in adobo sauce, chopped
1/2 cup fresh orange juice
3 cloves garlic, minced
1 tablespoon honey
2 tablespoons olive oil
1 teaspoon ground cumin
1/2 teaspoon paprika
Salt and pepper, to taste
Fresh cilantro, for garnish
Zest of 1 orange (optional)
Instructions
- In a medium bowl, whisk together the chopped chipotle peppers, orange juice, garlic, honey, olive oil, cumin, paprika, salt, and pepper until well combined.
- Place the chicken in a shallow dish or resealable bag and pour the marinade over it. Ensure all pieces are coated. Cover and refrigerate for at least 30 minutes, or up to overnight for deeper flavor.
- Heat a large skillet over medium-high heat and add a bit of oil if needed. Remove chicken from the marinade, letting excess drip off, and sear for 4–5 minutes per side until golden brown and cooked through (internal temperature should reach 165°F / 75°C).
- Remove chicken from the pan and rest for 5 minutes to allow juices to redistribute.
- Slice or serve whole. Garnish with fresh cilantro and orange zest if desired. Serve with rice, salad, or in wraps and tacos.
Notes
Marinate for several hours or overnight for the best flavor.
Use boneless thighs for a juicier result or breasts for a leaner option.
Can also be grilled or baked at 400°F (200°C) for 15–20 minutes.
Adjust spice level by using fewer chipotle peppers.
