Description

This Onion Oaxaca Dip is a creamy, cheesy dip that blends the savory sweetness of caramelized onions with the rich, melt-in-your-mouth flavors of Oaxaca and cheddar cheeses. Perfect for parties, game nights, or as a cozy appetizer, this dip is a crowd-pleaser with its bold, zesty kick from serrano pepper and cayenne. Serve it warm with your favorite dipping options like tortilla chips, pita, or fresh veggies.


Ingredients

For the Dip:

½ cup cream cheese (at room temperature)

½ cup Greek yogurt

2 cups onions, thinly sliced

2 tbsp butter

½ tbsp garlic, finely chopped

⅛ tsp black pepper

¼ tsp salt

34 tbsp cilantro, finely chopped

⅓ cup green onions, thinly sliced

¼ tsp cayenne pepper

1 cup Oaxaca cheese, shredded

½ cup mild cheddar cheese, shredded

½ tbsp serrano pepper, finely chopped

1 tsp cotija cheese (for topping)


Instructions

  1. Caramelize the Onions:

    • Sauté onions and garlic in butter with salt and black pepper for 12-15 minutes until golden brown and soft. Let cool.

  2. Prepare the Dip Mixture:

    • In a large bowl, combine cream cheese, Greek yogurt, cilantro, green onions, and cooled caramelized onions. Add cayenne, serrano pepper, and cheeses. Mix well.

  3. Preheat the Oven:

    • Preheat the oven to 350°F (175°C).

  4. Bake the Dip:

    • Transfer the mixture into two small ramekins or 4-inch baking bowls. Top with cotija cheese. Bake for 15-17 minutes until bubbly and golden.

  5. Serve:

    • Serve warm with chips, naan, pita, or fresh veggies.


Notes

You can adjust the spiciness of this dip by adding more serrano pepper or using jalapeños.

For added flavor, you can mix in cooked bacon or chorizo.

If you don’t have Oaxaca cheese, mozzarella or Monterey Jack are great alternatives.
