Description

These Mini McGriddle Bites are a fun, bite-sized twist on the classic McDonald’s breakfast sandwich. Combining fluffy pancake batter, savory breakfast sausage, melted cheddar cheese, and a touch of maple syrup, they’re perfect for busy mornings or brunch gatherings. Make them ahead of time and enjoy a deliciously sweet and savory treat whenever you need it!


Ingredients

  • 2 cups pancake mix (e.g., Bisquick or similar)
  • 1 ½ cups water
  • 1 lb breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • ¼ cup pure maple syrup

Instructions

1. Prepare the Sausage:

  1. In a skillet over medium-high heat, cook the breakfast sausage until browned, breaking it into crumbles as it cooks.
  2. Drain any excess grease and set aside.

2. Prepare the Pancake Batter:

  1. In a large bowl, combine the pancake mix and water, stirring until just combined (don’t overmix to keep it fluffy).
  2. Fold in the cooked sausage, shredded cheddar cheese, and maple syrup until evenly distributed.

3. Assemble the Bites:

  1. Preheat your oven to 400°F (200°C). Grease or line a mini muffin tin.
  2. Fill each muffin cup about ¾ full with the batter.

4. Bake:

  1. Place the muffin tin in the oven and bake for 12–15 minutes or until golden brown and a toothpick inserted into the center comes out clean.
