Ingredients
- 2 cups pancake mix (e.g., Bisquick or similar)
- 1 ½ cups water
- 1 lb breakfast sausage, cooked and crumbled
- 1 cup shredded cheddar cheese
- ¼ cup pure maple syrup
Instructions
1. Prepare the Sausage:
- In a skillet over medium-high heat, cook the breakfast sausage until browned, breaking it into crumbles as it cooks.
- Drain any excess grease and set aside.
2. Prepare the Pancake Batter:
- In a large bowl, combine the pancake mix and water, stirring until just combined (don’t overmix to keep it fluffy).
- Fold in the cooked sausage, shredded cheddar cheese, and maple syrup until evenly distributed.
3. Assemble the Bites:
- Preheat your oven to 400°F (200°C). Grease or line a mini muffin tin.
- Fill each muffin cup about ¾ full with the batter.
4. Bake:
- Place the muffin tin in the oven and bake for 12–15 minutes or until golden brown and a toothpick inserted into the center comes out clean.
