Tender and flavorful mini chicken meatloaves infused with ginger, five spice, and sweet plum sauce — a quick, family-friendly meal perfect for weeknights, meal prep, or lunchboxes.
Ingredients
Olive oil spray
650 g chicken mince
70 g (1 cup) fresh white breadcrumbs (from day-old bread)
1 small carrot, peeled and shredded
4 shallots, trimmed and thinly sliced
2 tsp grated fresh ginger
1 tsp Chinese five spice
60 ml (1/4 cup) plum sauce
Mixed salad leaves, to serve
Extra plum sauce, to serve (optional)
Instructions
- Preheat oven to 180°C (350°F). Lightly grease eight 185 ml (3/4-cup) capacity mini loaf pans with olive oil spray.
- In a large bowl, combine chicken mince, breadcrumbs, carrot, shallots, ginger, Chinese five spice, and 2 tablespoons of plum sauce. Season lightly with salt and pepper and mix until well combined.
- Divide mixture evenly among prepared loaf pans. Smooth the tops and brush with remaining plum sauce.
- Bake for 20 minutes or until juices run clear and internal temperature reaches 75°C (165°F).
- Allow to rest in pans for 5 minutes before removing. Serve warm or cold with salad leaves and extra plum sauce if desired.
Notes
Substitute turkey mince for chicken for a slightly different flavor.
Add grated zucchini or red capsicum for extra vegetables.
Use gluten-free breadcrumbs and sauce for a gluten-free option.
Shape into patties instead of loaves if preferred — bake or pan-fry.
Serve with mashed potatoes, rice, or steamed vegetables for a hearty meal.
