Description

Tender and flavorful mini chicken meatloaves infused with ginger, five spice, and sweet plum sauce — a quick, family-friendly meal perfect for weeknights, meal prep, or lunchboxes.


Ingredients

Olive oil spray

650 g chicken mince

70 g (1 cup) fresh white breadcrumbs (from day-old bread)

1 small carrot, peeled and shredded

4 shallots, trimmed and thinly sliced

2 tsp grated fresh ginger

1 tsp Chinese five spice

60 ml (1/4 cup) plum sauce

Mixed salad leaves, to serve

Extra plum sauce, to serve (optional)


Instructions

  1. Preheat oven to 180°C (350°F). Lightly grease eight 185 ml (3/4-cup) capacity mini loaf pans with olive oil spray.
  2. In a large bowl, combine chicken mince, breadcrumbs, carrot, shallots, ginger, Chinese five spice, and 2 tablespoons of plum sauce. Season lightly with salt and pepper and mix until well combined.
  3. Divide mixture evenly among prepared loaf pans. Smooth the tops and brush with remaining plum sauce.
  4. Bake for 20 minutes or until juices run clear and internal temperature reaches 75°C (165°F).
  5. Allow to rest in pans for 5 minutes before removing. Serve warm or cold with salad leaves and extra plum sauce if desired.

Notes

Substitute turkey mince for chicken for a slightly different flavor.

Add grated zucchini or red capsicum for extra vegetables.

Use gluten-free breadcrumbs and sauce for a gluten-free option.

Shape into patties instead of loaves if preferred — bake or pan-fry.

Serve with mashed potatoes, rice, or steamed vegetables for a hearty meal.

Store leftovers in the fridge for up to 3 days or freeze for up to 2 months.
