Description

Milk Brioche is a soft, buttery bread with a golden crust and pillowy texture, perfect for breakfast, snacks, or sandwiches. This easy recipe yields a melt-in-your-mouth treat.


Ingredients

4 cups all-purpose flour (500g)

1 cup whole milk (240ml)

2 1/4 teaspoons active dry yeast (7g)

1/4 cup granulated sugar (50g)

1/2 cup unsalted butter, softened (113g)

3 large eggs

1 teaspoon salt


Instructions

  1. Step 1: In a bowl, whisk together warm milk and sugar until dissolved. Sprinkle the yeast over the top and let it sit for 5-10 minutes, or until frothy.
  2. Step 2: In a separate bowl, mix flour and salt. Create a well in the center and add the yeast mixture and beaten eggs. Stir until a shaggy dough forms.
  3. Step 3: Transfer the dough to a floured surface and knead for about 10 minutes, or until smooth and elastic. Add more flour if necessary, but keep the dough soft.
  4. Step 4: Gradually knead in the softened butter until fully incorporated. Place the dough in a lightly oiled bowl, cover with plastic wrap, and let it rise in a warm spot for 1-2 hours or until doubled in size.
  5. Step 5: Punch down the dough to release air bubbles. Divide into portions and shape as desired—into rolls or a loaf. Place in a greased pan or on a baking sheet. Cover and let it rise for another 30-45 minutes until puffy.
  6. Step 6: Preheat the oven to 350°F (175°C). Bake for 25-30 minutes, or until golden brown and hollow when tapped. Let cool slightly before slicing.

Notes

For added flavor, you can mix chocolate chips, raisins, or cinnamon into the dough.

For a vegan version, replace butter with plant-based butter and use non-dairy milk, such as almond or oat milk, and flaxseed meal or an egg replacer for the eggs.

Add lemon or orange zest for a citrusy twist in the dough.
