Description
A cheesy, crunchy Mexican-inspired casserole made with layers of Doritos, creamy chicken or beef filling, and melted cheese. This quick and comforting dish is perfect for weeknights, potlucks, or game nights.
Ingredients
1 bag Nacho Doritos, crushed
2 cups shredded chicken or ground beef
2 cups shredded cheese, plus more for topping
1 can (10.75 oz) cream of chicken soup
1 can Rotel tomatoes, undrained
1/2 cup sour cream
1/2 cup milk
1/2 packet taco seasoning (adjust to taste)
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 2-quart casserole dish.
- In a large bowl, mix chicken or beef with 1 cup cheese, cream of chicken soup, Rotel, sour cream, milk, and taco seasoning.
- Spread half the crushed Doritos in the casserole dish.
- Layer half of the meat mixture on top of the Doritos.
- Repeat with remaining Doritos and meat mixture.
- Sprinkle extra cheese on top, if desired.
- Cover with foil and bake 35 minutes (or 45 minutes if doubling).
- Let rest a few minutes before serving. Garnish with green onions, cilantro, or jalapeños.
Notes
Use Cool Ranch Doritos for a flavor variation.
Swap cream of chicken soup for cream of mushroom when using ground beef.
Add corn, black beans, or bell peppers for more veggies.
Make it spicier with hot Rotel, spicy taco seasoning, or jalapeños.
Storage: Refrigerate leftovers up to 3 days. Reheat in oven at 325°F for best texture.
