Ingredients
- 4 flour tortillas (or gluten-free tortillas)
- 1 cup fresh spinach
- 1 medium tomato, diced
- 1/2 cup feta cheese, crumbled
- 1 cup mozzarella cheese, shredded
- 1/2 small red onion, thinly sliced
- Ground pepper, to taste
- Olive oil for cooking
Instructions
- Prepare the Filling: In a mixing bowl, combine the spinach, tomato, red onion, mozzarella, feta, and ground pepper. Mix well to combine.
- Assemble the Quesadillas: Lay a tortilla flat on a clean surface. Spread about 1/3 of the filling onto one half of the tortilla. Fold the tortilla over to cover the filling.
