Description

These Mediterranean Quesadillas are a quick, healthy, and flavorful twist on a classic favorite. Ingredients

  • 4 flour tortillas (or gluten-free tortillas)
  • 1 cup fresh spinach
  • 1 medium tomato, diced
  • 1/2 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1/2 small red onion, thinly sliced
  • Ground pepper, to taste
  • Olive oil for cooking

Instructions

  • Prepare the Filling: In a mixing bowl, combine the spinach, tomato, red onion, mozzarella, feta, and ground pepper. Mix well to combine.
  • Assemble the Quesadillas: Lay a tortilla flat on a clean surface. Spread about 1/3 of the filling onto one half of the tortilla. Fold the tortilla over to cover the filling.
  • Cook: Heat a skillet over medium heat and lightly coat it with olive oil. Cook the quesadilla for 3-4 minutes on each side, pressing down gently with a spatula to help the cheese melt evenly and the tortilla become golden brown and crispy.
