Ingredients

2 tbsp butter

½ small onion, chopped

1 tbsp flour

1 (14.5 oz) can chicken broth

½ cup milk

1 (20 oz) package HORMEL® Homestyle Mashed Potatoes

Salt and pepper, to taste

1 cup Savory Rosemary Sea Salt Cashew Granola


Instructions

  1. Melt butter in a medium saucepan over medium heat. Add onion and cook 2–3 minutes until softened and fragrant.
  2. Stir in flour and cook 30 seconds to form a light roux. Gradually whisk in chicken broth and milk until smooth. Bring to a gentle boil and cook until slightly thickened.
  3. Reduce heat to medium, then add mashed potatoes. Stir and simmer for 5 minutes until creamy and heated through. Season with salt and pepper to taste.
  4. Ladle soup into bowls and top generously with savory granola. Serve immediately for the best texture.

Notes
