Description

Maroulosalata Romaine Dill Feta is a refreshing Greek salad made with crisp romaine lettuce, tangy feta cheese, and aromatic dill, all dressed in a zesty lemon olive oil vinaigrette. Perfect as a side dish or light meal.

Ingredients

Salad Base:

2 hearts romaine lettuce, thinly sliced

4 to 5 scallions, finely diced

1 bunch fresh dill, chopped

Cheese:

4 ounces feta cheese, crumbled

Dressing:

1/2 cup extra-virgin olive oil

Juice of 1 large lemon

1/4 teaspoon salt

Instructions

  1. Prepare the Romaine Lettuce: Rinse the romaine lettuce thoroughly to remove any dirt and slice it thinly. Use a salad spinner to dry the lettuce completely to avoid any excess water in the salad.
  2. Make the Dressing: In a small bowl or mixing cup, whisk together the olive oil, lemon juice, and salt until the emulsion is smooth and slightly thickened.
  3. Assemble the Salad: In a large salad bowl, combine the sliced romaine, diced scallions, chopped dill, and crumbled feta cheese.
  4. Toss and Massage: Pour the prepared dressing over the salad ingredients. Toss thoroughly, massaging the greens gently with your hands to allow the flavors to permeate and slightly tenderize the lettuce leaves.

Notes

For extra freshness, add chopped cucumbers, tomatoes, or bell peppers to the salad.

To make it a full meal, top the salad with grilled chicken, lamb, or chickpeas.

For a vegan option, substitute the feta cheese with a vegan cheese alternative.
