Description

This Marinated Cheese Appetizer features cubes of sharp, creamy cheddar cheese marinated in a garlicky, spicy olive oil mixture. Combined with olives and fresh rucola leaves, it’s a simple, flavorful snack perfect for any gathering.


Ingredients

1 lb Darigold Medium White Cheddar Cheese (or another good-quality white cheddar cheese)

1/4 cup chopped parsley

1 cup olives (green or black, your choice)

13 cloves garlic, crushed

1/4 cup olive oil

1 tsp crushed red pepper flakes

1 cup rucola (arugula) leaves


Instructions

  1. Mix the chopped parsley, crushed garlic cloves, crushed red pepper flakes, and olive oil in a bowl.
  2. Cut the white cheddar cheese into cubes and add it to the bowl with the parsley mixture. Toss to coat the cheese evenly with the marinade.
  3. Add the olives to the cheese mixture and mix gently to combine.
  4. Arrange the rucola leaves on a plate, then top with the marinated cheese and olive mixture.
  5. Serve immediately, or let it marinate in the refrigerator for 30 minutes to allow the flavors to meld.

Notes

For a different flavor profile, try swapping the cheddar for gouda, mozzarella, or feta.

Toast some pine nuts or almonds for added crunch and richness.
