Description

Maple-Dijon Breakfast Croissant Sandwiches are the perfect savory-sweet breakfast indulgence. With crispy chicken sausage, soft scrambled eggs, cheddar cheese, and a rich maple-Dijon sauce, this hearty breakfast sandwich is sure to impress. Ingredients

For the Maple-Dijon Sauce:

1 tablespoon honey

2 tablespoons Dijon mustard

For the Sandwiches:

7 plain croissants

7 slices sharp cheddar cheese

1 9-ounce package breakfast chicken sausage links

7 large eggs

1/3 cup whole milk

2 tablespoons olive oil

Salt and black pepper, to taste

Fresh chives, chopped (for garnishing)


Instructions

  • Preheat the Oven: Preheat the oven to 400°F (200°C) and line a large baking pan with parchment paper.
  • Cook the Sausage: In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Add the breakfast chicken sausage links and cook for 3-4 minutes until warmed through. Remove from the skillet and set aside.
  • Scramble the Eggs: In a large bowl, whisk the eggs and milk together until smooth. Season with salt and black pepper. Add the remaining 1 tablespoon of olive oil to the skillet, reduce the heat to medium, and cook the eggs, using a spatula to gently scramble them to your desired consistency.
  • Make the Maple-Dijon Sauce: In a small bowl, whisk together honey and Dijon mustard until well combined.
  • Assemble the Sandwiches: Slice the croissants in half and spread a generous amount of the maple-Dijon sauce on the bottom halves. Evenly distribute scrambled eggs among the croissants. Place a slice of cheddar cheese on each sandwich and bake for 4-5 minutes until the cheese is mostly melted.
  • Add Sausage: Layer the croissants with the cooked sausage links and fresh chives. Add the top halves of the croissants and bake for 8-10 minutes, until the croissants are golden and crisp.
  • Serve: Remove from the oven and serve warm

Notes

Add Vegetables: Sautéed spinach, mushrooms, or avocado would make great additions to these sandwiches for extra flavor and nutrition.
