Description

This Low Carb Blackberry Cottage Cheese Chicken Salad combines creamy cottage cheese, savory chicken, crunchy walnuts, and sweet blackberries. It’s a refreshing, protein-packed meal perfect for lunch or dinner, and it’s ideal for those following a low-carb or keto diet. Quick and easy, it’s a satisfying dish with the perfect balance of creamy and tangy flavors.

Ingredients

2 chicken breasts, cooked and shredded

1 cup cottage cheese

1/4 cup mayonnaise

2 celery stalks, diced

2 green onions, sliced

1/2 cup blackberries (sliced in half or quarters, depending on size)

1/4 cup chopped walnuts

Salt and pepper, to taste

Optional: keto bread for serving

Instructions

  • Cook the Chicken:
Cook the chicken breasts according to your preference (baked, boiled, or grilled). Once cooked through, shred and chop into bite-sized pieces. Set aside to cool.

  • Prepare the Veggies:
Chop the celery and slice the green onions.

  • Assemble the Salad:
In a large bowl, combine the shredded chicken, chopped celery, sliced green onions, blackberries, and walnuts.

  • Add the Dressing:
Stir in the cottage cheese and mayonnaise. Mix well.

  • Season:
Add salt and pepper to taste and mix again.

  • Serve:
Serve the salad as is or on your favorite keto bread for a sandwich.

Notes

Add-ins:
Feel free to customize the salad with other fruits like raspberries or strawberries, or add avocado for extra creaminess.

Vegan Option:
Use plant-based mayonnaise and substitute the chicken with chickpeas or tofu for a vegetarian version.
