4 oz cream cheese or coconut butter

2 tbsp butter or additional coconut butter

3 tbsp powdered sugar or erythritol

Instructions

  • Soften Ingredients: Ensure that the cream cheese (or coconut butter) and butter are at room temperature for easier mixing.

  • Mix Ingredients: In a bowl, blend the cream cheese, butter, powdered sugar (or erythritol), and lemon zest until smooth. A hand mixer works best, but you can use a fork or whisk if you don’t have one.

  • Shape the Truffles:

    • For Bars: Spread the mixture into a container and freeze until firm. Once set, cut into bars or squares.

    • For Balls: Freeze the mixture for a few minutes until it firms up enough to scoop. Use a mini cookie scoop to form the truffles, placing them on a parchment-lined plate. Freeze until the truffles are solid.

  • Optional Coating: If coating with chocolate, melt the white chocolate (or coconut butter) and dip each truffle into the melted mixture. Stir in ½ tsp of oil for a smoother texture, if desired.
