Description

Lemon Berry Ritz Icebox Cake is a refreshing no-bake dessert layering crisp Ritz crackers with creamy mascarpone, sweetened condensed milk, and juicy mixed berries, brightened with fresh lemon zest.


Ingredients

2 cups mixed berries (strawberries, blueberries, raspberries), lightly crushed

1 tablespoon granulated sugar

2 teaspoons fresh lemon zest

1 cup heavy cream

½ cup mascarpone cheese

½ cup sweetened condensed milk

1 teaspoon vanilla extract

1 pack Ritz crackers (about 200 grams)

Fresh mint leaves, for garnish


Instructions

  1. Combine mixed berries, sugar, and lemon zest in a bowl. Let sit 10 minutes to release juices.
  2. Beat heavy cream until soft peaks form. Add mascarpone, sweetened condensed milk, and vanilla extract; beat until smooth.
  3. In a 9×13-inch dish, arrange a layer of Ritz crackers, breaking some to cover gaps.
  4. Spread half the cream mixture over crackers, then spoon half the berry mixture on top.
  5. Add another cracker layer, spread remaining cream, and top with remaining berries.
  6. Cover and refrigerate for at least 4 hours or overnight to soften crackers and meld flavors.
  7. Garnish with fresh mint leaves before serving.

Notes

Add toasted sliced almonds or chopped walnuts between layers for nuttiness.

Increase lemon zest or add crystallized ginger for extra zing.

Substitute heavy cream and mascarpone with coconut whipped cream for dairy-free version.

Store leftovers covered in fridge up to 3 days; flavors improve over time.
