These Lavender Honey Crunch Cookies are a unique and elegant treat with a floral lavender flavor, sweet honey, and a delightful crunch from oats and almonds. Perfect for tea time, special occasions, or any sweet craving, these cookies offer a sophisticated twist on a classic favorite. The combination of delicate flavors and texture is sure to impress!

Ingredients

1 cup unsalted butter, softened

3/4 cup granulated sugar

1/4 cup honey

1 large egg

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 tablespoon culinary lavender buds

1/2 cup rolled oats

1/2 cup chopped almonds

Instructions

  • Preheat the oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.

  • Cream the wet ingredients: In a large bowl, cream together the softened butter, granulated sugar, and honey until light and fluffy.

  • Add egg and vanilla: Beat in the egg and vanilla extract until well combined.

  • Mix the dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.

  • Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  • Fold in the mix-ins: Fold in the culinary lavender buds, rolled oats, and chopped almonds until evenly distributed.

  • Shape the cookies: Drop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.

  • Bake: Bake for 10-12 minutes, or until the edges are lightly golden.

  • Cool: Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Add a drizzle of honey: For an extra touch of sweetness, drizzle some honey over the cookies once they’re cool.

Use different nuts: You can replace almonds with walnuts or pecans for a different flavor and texture.

Make it gluten-free: Substitute the all-purpose flour with a gluten-free flour blend to make these cookies gluten-free.

Use dried lavender flowers: If culinary lavender is unavailable, you can use dried lavender flowers (ensure they are food-safe).
