Description

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 (28 oz) can canned tomatoes (whole, diced, or crushed)
  • 1 (15 oz) can tomato sauce
  • 2 tbsp tomato paste
  • 4 cups chicken broth (or preferred broth)
  • 2 cups water
  • 1 tsp Italian seasoning
  • 2 cups bowtie pasta (or other sturdy pasta like macaroni, rigatoni, or penne)
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • Fresh parsley, chopped (for garnish)

Instructions

  • Heat olive oil in a large soup pot over medium heat. Add the ground beef, onion, and garlic, and cook until the beef is browned. Drain any excess fat.
  • Add canned tomatoes, tomato sauce, tomato paste, chicken broth, water, and Italian seasoning to the pot. Stir to combine.
  • Bring the mixture to a boil, then add the pasta. Reduce the heat to medium and let it simmer, covered, for 10-15 minutes or until the pasta is tender.
  • Adjust the soup’s consistency by adding more water or broth as needed.
  • Ladle the soup into bowls and top with ricotta, mozzarella, and Parmesan cheeses. Garnish with fresh parsley and serve.
