Ingredients
- 2 cups almond flour
- 1/2 cup erythritol-based sweetener (or your preferred low-carb sweetener)
- 1/4 cup coconut flour
- 1/2 cup butter, melted
- 1/2 cup sugar-free jam (ChocZero raspberry or preferred flavor)
- 2 tablespoons whipping cream (or dairy-free milk alternatives)
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Keto sprinkles (optional)
Instructions
- Prepare the Dough: In a large bowl, whisk together almond flour, sweetener, coconut flour, and salt. Stir in melted butter and vanilla extract until the dough starts to clump together.
- Bake the Bottom Crust: Press half of the dough into an 8×8-inch baking pan lined with parchment paper. Bake at 350°F for 10 minutes. Remove and let it cool for 10 minutes.
- Add the Jam: Spread the sugar-free jam evenly over the cooled crust. Sprinkle the remaining dough over the jam and lightly press to even it out.
- Bake the Bars: Bake for another 20-25 minutes or until the top is golden brown. Let the bars cool completely before refrigerating for 1 hour to firm up.
- Prepare the Glaze: Mix whipping cream (or dairy-free milk) with sweetener to create a smooth glaze. Drizzle over the cooled bars before serving.
