Description

Keto French Toast made with homemade low-carb almond flour bread, creating a crispy, golden exterior and a soft, creamy interior, perfect for a sugar-free breakfast.

Ingredients

For the Keto Bread:

1 cup almond flour

2 tsp baking powder

3 large eggs

6 tbsp whole milk (or plant-based milk)

4 tbsp butter, melted

½ tsp salt

1 tbsp erythritol

For the French Toast:

2 large eggs

2 tbsp whole milk (or plant-based milk)

2 tsp ground cinnamon

Erythritol powder, fruits, or sugar-free syrup to garnish

Instructions

  1. Prepare the Keto Bread: Preheat your oven to 300°F (150°C). Grease a 5×10-inch loaf pan with oil or line it with parchment paper. In a bowl, whisk together the eggs, milk, and melted butter. Add the almond flour, baking powder, salt, and erythritol. Stir until fully combined. Pour the batter into the pan and smooth out the top. Bake for 40-50 minutes, or until golden. Allow it to cool completely before slicing.
  2. Prepare the French Toast Mixture: In a shallow bowl, whisk together eggs, milk, and ground cinnamon.
  3. Coat the Bread Slices: Slice the cooled keto bread into 1-inch thick slices. Dip each slice into the egg mixture, ensuring both sides are coated.
  4. Cook the French Toast: Heat a skillet over medium heat and add olive oil. Cook the soaked bread slices for 2-3 minutes on each side until golden and crispy.
  5. Garnish and Serve: Sprinkle with erythritol powder, fresh berries, or serve with sugar-free syrup. Enjoy!

Notes

Add chopped nuts like pecans or walnuts to the bread mixture for added crunch.

For a spiced version, include nutmeg or cloves in the egg mixture.

This recipe is dairy-free by swapping the milk and butter for plant-based alternatives.
