Ingredients
8 oz cream cheese, softened (or vegan cream cheese)
8 oz Cool Whip (or coconut whipped topping)
1 cup sugar-free powdered sugar
1/2 cup unsalted butter (or vegan butter)
1/2 cup monk fruit brown sugar
1/4 cup sugar-free maple syrup (or honey)
1 cup pecans
1 tsp vanilla extract
1 tsp cinnamon
1/4 tsp salt
2 cups apple wedges or pretzels, for serving
Instructions
- In a medium bowl, beat softened cream cheese with an electric mixer until smooth and creamy.
- Fold in Cool Whip and sugar-free powdered sugar until the mixture becomes light and fluffy.
- Spread the mixture evenly into the bottom of a serving dish to form the dip base.
- In a skillet, melt the butter over medium-high heat until bubbling. Stir in monk fruit brown sugar, maple syrup, pecans, vanilla extract, cinnamon, and salt.
- Cook, stirring continuously, for about 4–5 minutes until slightly thickened and fragrant.
- Remove from heat and allow to cool for 10–15 minutes until the topping sets slightly but remains pourable.
- Pour the pecan topping evenly over the cream cheese base and smooth it out.
- Serve immediately with apple slices, pretzels, or graham crackers for dipping.
