Description

Flaky puff pastry tarts topped with sweet caramelized onions and creamy goat cheese, baked until golden and crisp. These elegant savory tarts are simple to make and perfect as appetizers, brunch bites, or a light meal.

Ingredients

1 sheet puff pastry, thawed

2 large onions, thinly sliced

2 tbsp olive oil

1 tbsp butter

1 tsp sugar

1 tsp balsamic vinegar

4 oz goat cheese, crumbled

1 tsp fresh thyme leaves

Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Heat olive oil and butter in a large skillet over medium heat. Add sliced onions, sugar, salt, and pepper. Cook slowly for about 20 minutes, stirring occasionally, until the onions are deeply golden and caramelized. Stir in balsamic vinegar and thyme, then remove from heat.
  3. Roll out the puff pastry on a lightly floured surface and cut into 6 equal squares. Place them on the prepared baking sheet.
  4. Spoon the caramelized onion mixture evenly onto each pastry square, leaving a small border around the edges. Sprinkle crumbled goat cheese over the onions.
  5. Bake for 15–20 minutes until the pastry is puffed and golden brown. Serve warm.

Notes

Drizzle a small amount of honey on top before serving for a subtle sweet contrast.

Add grated Parmesan with the goat cheese for extra savory depth.

Sprinkle chopped walnuts after baking for added crunch.

You can add sliced mushrooms or fresh figs before baking for variation.

Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in a 350°F (175°C) oven for 8–10 minutes.

For best results, avoid microwaving as it can soften the pastry.
