Description

Irish Tea Cake is a light, golden-brown cake with a soft, fluffy texture and a slightly sweet, crunchy top. It’s perfect for enjoying with tea or coffee, and can be served plain or dressed up with whipped cream and fruit.


Ingredients

2 cups all-purpose flour

1 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup unsalted butter, softened

3 large eggs, room temperature

1 cup whole milk

2 teaspoons vanilla extract

2 tablespoons granulated sugar (for topping)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8-inch round cake pan.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, cream the butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Gradually mix in half of the dry ingredients, then the milk, followed by the remaining dry ingredients, mixing until just combined.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Sprinkle 2 tablespoons of sugar evenly over the top.
  8. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Swap cinnamon with nutmeg or cardamom for a different flavor.

Add raisins or currants for a traditional Irish variation.

Serve with whipped cream, fresh fruit, or custard for extra indulgence.

Store at room temperature for 3 days, refrigerate for up to 1 week, or freeze slices for up to 3 months.
