Description

Hot Honey Roasted Cashews are a spicy-sweet snack combining honey, cayenne pepper, and smoked paprika, roasted to perfection with cashews for a crunchy, addictive treat.


Ingredients

2 cups raw cashews

2 tablespoons olive oil

3 tablespoons honey

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon sea salt

¼ teaspoon black pepper

Fresh rosemary or thyme (optional, for garnish)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium mixing bowl, combine the raw cashews with olive oil and stir until evenly coated.
  3. In a small bowl, whisk together honey, cayenne pepper, smoked paprika, garlic powder, sea salt, and black pepper. Pour this mixture over the cashews and toss until well coated.
  4. Spread the cashews in a single layer on the baking sheet, ensuring they are not overlapping.
  5. Roast for 15-20 minutes, stirring halfway through, until golden brown and fragrant. Keep an eye on them to prevent burning.
  6. Remove from the oven and let cool for 10 minutes. Garnish with fresh rosemary or thyme, if desired.
  7. Serve as a snack, salad topping, or part of a charcuterie board.

Notes

For extra heat, increase the cayenne pepper or add chili flakes.

Use a mix of nuts such as almonds, pecans, or walnuts for variety.

Store in an airtight container at room temperature for up to a week.

For a vegan version, substitute honey with maple syrup or agave syrup.

To prevent burning, stir the cashews halfway through roasting and check them closely.
