Ingredients
2 cups raw cashews
2 tablespoons olive oil
3 tablespoons honey
1 teaspoon cayenne pepper (adjust to taste)
1 teaspoon smoked paprika
½ teaspoon garlic powder
½ teaspoon sea salt
¼ teaspoon black pepper
Fresh rosemary or thyme (optional, for garnish)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium mixing bowl, combine the raw cashews with olive oil and stir until evenly coated.
- In a small bowl, whisk together honey, cayenne pepper, smoked paprika, garlic powder, sea salt, and black pepper. Pour this mixture over the cashews and toss until well coated.
- Spread the cashews in a single layer on the baking sheet, ensuring they are not overlapping.
- Roast for 15-20 minutes, stirring halfway through, until golden brown and fragrant. Keep an eye on them to prevent burning.
- Remove from the oven and let cool for 10 minutes. Garnish with fresh rosemary or thyme, if desired.
- Serve as a snack, salad topping, or part of a charcuterie board.
Notes
For extra heat, increase the cayenne pepper or add chili flakes.
Use a mix of nuts such as almonds, pecans, or walnuts for variety.
Store in an airtight container at room temperature for up to a week.
For a vegan version, substitute honey with maple syrup or agave syrup.
To prevent burning, stir the cashews halfway through roasting and check them closely.
