Description
Hot Cajun Boudin Dip is a creamy, spicy, and flavorful appetizer made with Cajun boudin, creamy cheeses, pickled jalapeños, and hot sauce. Perfect for game days or gatherings, this dip is a crowd-pleaser served warm with crackers.
Ingredients
1 ⅓ pound boudin
8 ounces cream cheese (softened)
8 ounces sour cream
4 ounces smoked gouda (about 1 cup when shredded)
4 ounces cheddar cheese (about 1 cup when shredded)
½ cup pickled jalapeños
2 tablespoons hot sauce
1 teaspoon smoked paprika
6 green onions
4 cloves garlic

Instructions
- Preheat your oven to 425°F. Chop the green onions, mince the garlic, and dice the pickled jalapeños. Grate the smoked gouda and cheddar. Remove the casings from the boudin and break the sausage into crumbles.
- In a large mixing bowl, whip the softened cream cheese on medium-high speed for about 2 minutes until smooth and fluffy.
- Add the sour cream, half of the grated gouda and cheddar, pickled jalapeños, hot sauce, smoked paprika, half of the chopped green onions, and minced garlic. Mix until well combined. Season with Cajun seasoning to taste, then stir in the crumbled boudin.
- Pour the mixture into a greased 8×8 baking dish and top with the remaining cheese. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and top with the remaining fresh green onions. Serve hot with crackers for dipping.
Notes
For an extra spicy version, use hot boudin sausage or add more pickled jalapeños.
Grill the boudin before removing the casings for an extra smoky flavor.
For a creamier dip, increase the amount of cream cheese and sour cream, or add some heavy cream.
