Ingredients
1 lb 80% ground beef
Vegetable oil, to brush skillet
Salt
8 slices American cheese
4 burger buns
Mayonnaise
Ketchup
Mustard
Lettuce
Tomato, sliced
Onions, sliced
Pickles
Instructions
- Heat a cast iron skillet or griddle over high heat (or medium-high on the stovetop) until extremely hot.
- Brush the hot surface lightly with vegetable oil.
- Divide the ground beef into four 1/4-lb portions, loosely shaping into balls if needed.
- Place a beef ball onto the skillet.
- Firmly smash the burger with a metal spatula or grill press until about 4 inches wide.
- Season generously with salt and cook undisturbed for about 2 minutes until the edges are brown and crispy.
- Flip the patty, season again, and immediately top with 2 slices of American cheese.
- Cook for 1 more minute, just until the cheese melts.
- Remove and place on a warm bun with mayonnaise and desired toppings.
- Repeat with remaining patties. Stack two patties if desired.
Notes
Use 80% beef for best crust and juiciness.
Do not pack the meat—loose texture creates a tender burger.
Any melty cheese works, but American gives the best melt.
Make sure the skillet is very hot to prevent sticking.
