Ingredients
2 cups unbleached all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
¼ cup vegetable oil
¾ cup warm water
Instructions
-
In a large bowl or stand mixer, whisk together flour, salt, and baking powder.
-
Add vegetable oil and warm water, stirring until a dough forms.
-
Knead until smooth: about 2 minutes in a stand mixer or 5 minutes by hand.
-
Place dough in a lightly oiled bowl, cover, and rest for 1 hour at room temperature.
-
Divide dough into 10 equal portions. Roll each into a ball and let rest for 10 minutes.
-
On a lightly floured surface, roll each ball into a 6-inch circle, turning often.
-
Heat a dry cast iron skillet over medium-high heat.
-
Cook each tortilla for about 30 seconds per side until golden spots appear.
-
Stack cooked tortillas in a container lined with a paper towel to keep soft.
Notes
Use avocado or canola oil for a flavor variation.
Substitute half the flour with whole wheat for whole wheat tortillas.
Add ground cumin, rosemary, or smoked paprika for extra flavor.
Roll thinner for wraps or thicker for tacos depending on use.
