Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 45 medium potatoes, thinly sliced
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup beef broth or water
  • 1/4 cup milk (optional, for creaminess)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil or cooking spray.
  2. Cook the Ground Beef: In a large skillet, heat olive oil over medium heat. Add the ground beef and cook for 5-7 minutes, breaking it apart as it cooks. Drain any excess fat if necessary.
  3. Add Onions and Garlic: Stir in the chopped onions and minced garlic. Cook for 3-4 minutes, or until the onions are softened.
  4. Assemble the Casserole: Layer the thinly sliced potatoes in the bottom of the prepared baking dish. Season the potatoes with salt, pepper, Italian seasoning, and paprika. Spoon the cooked ground beef mixture over the potatoes.
  5. Add Cheese and Liquids: Sprinkle the shredded cheddar cheese and Parmesan cheese over the beef and potatoes. Pour the beef broth (or water) around the edges to keep the potatoes moist. If desired, add milk for extra creaminess.
  6. Bake: Cover the dish with foil and bake for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden.
  7. Serve: Garnish with fresh parsley if desired, and serve hot!

Notes

  • If you prefer a spicier dish, you can add jalapeños or red pepper flakes.
  • Make sure the potatoes are thinly sliced for even cooking.
  • The casserole can be assembled in advance and stored in the fridge until ready to bake.
