Ingredients
1 can hearts of palm, sliced
4 cups mixed greens (arugula, spinach, and romaine)
1 cup cherry tomatoes, halved
1 medium cucumber, sliced
1/4 cup red onion, thinly sliced
1/4 cup fresh cilantro, chopped
3 tablespoons olive oil
2 tablespoons lime juice, freshly squeezed
1 teaspoon honey or agave syrup
1/2 teaspoon salt, to taste
1/4 teaspoon black pepper, freshly ground
Instructions
- Slice the hearts of palm, halve the cherry tomatoes, slice the cucumber, and thinly slice the red onion.
- Place the hearts of palm, mixed greens, cherry tomatoes, cucumber, red onion, and chopped cilantro into a large mixing bowl.
- In a small bowl, whisk together the olive oil, lime juice, honey (or agave), salt, and black pepper until the dressing is smooth and well combined.
- Drizzle the dressing over the salad ingredients.
- Gently toss the salad until the vegetables are evenly coated with the dressing.
- Serve immediately for the freshest flavor and texture.
Notes
Add sliced avocado for extra creaminess.
Crumbled feta cheese can add a salty and tangy flavor.
