Description

Healthy wholemeal chicken tacos made with homemade wholemeal tortillas and a spiced chicken filling, topped with fresh vegetables and creamy garnishes for a wholesome and satisfying meal.


Ingredients

2 cups wholemeal flour

A pinch of salt

2/3 cup boiling water

3 tablespoons olive oil

2 chicken fillets, chopped

1/2 teaspoon cumin

A pinch of paprika

1 teaspoon curry powder

1 tablespoon lemon juice

Guacamole, for topping

Sour cream, for topping

1 tomato, chopped

1/2 cucumber, chopped

Greens, chopped

1/4 red onion, chopped


Instructions

  1. In a large mixing bowl, combine wholemeal flour, salt, and olive oil.
  2. Slowly stir in boiling water until a dough forms, then knead for a few minutes.
  3. Let the dough rest for 30 minutes at room temperature.
  4. Divide the dough into 8 pieces and roll each into a flat circle with a rolling pin.
  5. Cook tortillas in a hot frying pan for 2–3 minutes per side, then set aside.
  6. In the same pan, cook chicken with cumin, paprika, curry powder, and lemon juice for about 10 minutes, until fully cooked.
  7. Assemble tacos by filling tortillas with chicken and topping with guacamole, sour cream, tomato, cucumber, greens, and red onion.

Notes

Chicken thighs can be used instead of chicken fillets for a juicier filling.

Add chili powder or jalapeños for extra heat.

Swap chicken with beans, lentils, or mushrooms for a vegetarian option.

Experiment with toppings like salsa, pickled onions, or cheese.

Keep cooked tortillas wrapped in a towel to stay soft.

Store tortillas in the fridge for up to 3 days or freeze for longer storage.
