Description

These healthy strawberry oatmeal bars feature a buttery oat crumble layered with juicy strawberries for a wholesome snack or dessert. Finished with an optional vanilla glaze, they offer a perfect balance of tart and sweet flavors.


Ingredients

1 cup old-fashioned rolled oats (gluten free if needed)

3/4 cup white whole wheat flour (or all-purpose flour or 1:1 gluten-free baking flour)

1/3 cup light brown sugar

1/4 teaspoon ground ginger

1/4 teaspoon kosher salt

6 tablespoons unsalted butter, melted (or melted coconut oil)

2 cups small-diced strawberries, divided

1 teaspoon cornstarch

1 tablespoon freshly squeezed lemon juice

1 tablespoon granulated sugar, divided

1/2 cup powdered sugar

1/2 teaspoon pure vanilla extract

1 tablespoon milk (any kind)


Instructions

  1. Preheat oven to 375°F and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix oats, flour, brown sugar, ginger, and salt. Stir in melted butter until crumbly.
  3. Set aside 1/2 cup of the mixture. Press the remaining mixture firmly into the pan to form a crust.
  4. Spread half of the strawberries over the crust. Sprinkle with cornstarch, lemon juice, and half of the granulated sugar.
  5. Add remaining strawberries and sprinkle with the rest of the sugar.
  6. Top with the reserved crumble mixture.
  7. Bake for 35–40 minutes until golden and bubbly. Cool completely.
  8. Whisk powdered sugar, vanilla, and milk to make glaze. Drizzle over cooled bars, slice, and serve.

Notes

Substitute strawberries with raspberries or blueberries for variation.

Use coconut oil and plant-based milk for a dairy-free option.

Add chopped nuts for extra crunch.

Store in an airtight container in the refrigerator for up to 5 days.

Freeze unglazed bars for longer storage and thaw before serving.

Ensure bars are fully cooled before slicing for clean cuts.
