Description
These healthy strawberry oatmeal bars feature a buttery oat crumble layered with juicy strawberries for a wholesome snack or dessert. Finished with an optional vanilla glaze, they offer a perfect balance of tart and sweet flavors.
Ingredients
1 cup old-fashioned rolled oats (gluten free if needed)
3/4 cup white whole wheat flour (or all-purpose flour or 1:1 gluten-free baking flour)
1/3 cup light brown sugar
1/4 teaspoon ground ginger
1/4 teaspoon kosher salt
6 tablespoons unsalted butter, melted (or melted coconut oil)
2 cups small-diced strawberries, divided
1 teaspoon cornstarch
1 tablespoon freshly squeezed lemon juice
1 tablespoon granulated sugar, divided
1/2 cup powdered sugar
1/2 teaspoon pure vanilla extract
1 tablespoon milk (any kind)
Instructions
- Preheat oven to 375°F and line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix oats, flour, brown sugar, ginger, and salt. Stir in melted butter until crumbly.
- Set aside 1/2 cup of the mixture. Press the remaining mixture firmly into the pan to form a crust.
- Spread half of the strawberries over the crust. Sprinkle with cornstarch, lemon juice, and half of the granulated sugar.
- Add remaining strawberries and sprinkle with the rest of the sugar.
- Top with the reserved crumble mixture.
- Bake for 35–40 minutes until golden and bubbly. Cool completely.
- Whisk powdered sugar, vanilla, and milk to make glaze. Drizzle over cooled bars, slice, and serve.
Notes
Substitute strawberries with raspberries or blueberries for variation.
Use coconut oil and plant-based milk for a dairy-free option.
Add chopped nuts for extra crunch.
Store in an airtight container in the refrigerator for up to 5 days.
Freeze unglazed bars for longer storage and thaw before serving.
