Ingredients
1 lb ground turkey
2 large sweet potatoes, peeled and cubed
1 small onion, diced
2 cloves garlic, minced
1/2 cup bell pepper, diced
1 tsp smoked paprika
1/2 tsp ground cumin
Salt and pepper to taste
1 cup shredded cheddar cheese
1/4 cup chopped fresh parsley
2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Boil sweet potatoes in salted water until tender, about 15 minutes. Drain and mash lightly.
- Heat olive oil in a large skillet over medium heat.
- Add onion, garlic, and bell pepper; sauté until softened.
- Add ground turkey, smoked paprika, cumin, salt, and pepper. Cook until turkey is browned and cooked through.
- Mix turkey mixture with mashed sweet potatoes and half the cheddar cheese.
- Transfer mixture to a greased baking dish.
- Sprinkle remaining cheddar cheese on top.
- Bake for 20-25 minutes until cheese melts and casserole is heated through.
- Garnish with fresh parsley before serving.
