Instructions
- Heat the olive oil in a large pot or Dutch oven over medium-high heat.
- Add the ground beef to the pot and crumble it well.
- Add the diced onions to the ground beef. Stir well and continue cooking until the ground beef is fully browned and the onions are translucent.
- Add the chopped garlic and Italian seasoning. Stir well and cook for about 1 minute.
- Add the cheddar soup, cream of bacon soup, chicken broth, and half and half to the pot. Stir until all of the ingredients are well combined.
- Add the frozen mixed veggies to the pot and stir well. Bring to a boil.
- While waiting for the liquid to boil, open the package of biscuits and cut each biscuit into 6 pieces.
- Once the liquid is boiling, add the biscuit dough pieces to the pot.
- Stir well, place a lid on the pot, and reduce the heat to medium-low. Let it simmer for 15 minutes.
- After 15 minutes, remove the lid from the pot and stir well. Remove the pot from the heat and let the dish rest for a few minutes to thicken up.
- Serve and enjoy!
Notes
Vegetarian Version: Swap the ground beef for a plant-based meat substitute or add extra vegetables like mushrooms, zucchini, or potatoes.
Spicy Option: Add a pinch of red pepper flakes or a chopped jalapeño to give the dish some heat.
Cheese Lover’s Twist: Sprinkle shredded cheddar or mozzarella cheese on top of the dumplings for an extra cheesy experience.
Storage: Store any leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating: Reheat on the stovetop over medium heat until warmed through. You may need to add a splash of chicken broth or half and half to restore the creamy texture.
Freezing: Let the dish cool completely before transferring it to an airtight container. It can be stored in the freezer for up to 2 months.
